Blackberry Red Velvet Cheesecake 🍇🍰
Ingredients:
🍪 1 1/2 cups crushed chocolate sandwich cookies (like Oreos)
🧈 1/4 cup unsalted butter, melted
🧀 16 oz cream cheese, softened
🍬 1 cup granulated sugar
🥚 3 large eggs
🍭 1/2 cup sour cream
🥄 1 tbsp vanilla extract
🥄 1 tbsp red food coloring
🍇 1 cup fresh blackberries (plus extra for garnish)
🥄 1 tbsp lemon juice
🍫 1/4 cup white chocolate chips (optional for decoration)
Instructions:
🔥 Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
🍪 In a bowl, combine crushed cookies and melted butter. Press the mixture into the bottom of the prepared springform pan to form the crust.
🥁 In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
🥚 Add the eggs one at a time, mixing well after each addition.
🍭 Stir in the sour cream, vanilla extract, red food coloring, and lemon juice until well combined.
🍇 In a small bowl, mash the blackberries and fold them into the cheesecake batter gently to create a swirl effect.
🍰 Pour the cheesecake mixture over the prepared crust, smoothing the top.
🔥 Bake for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
❄️ Remove from the oven and refrigerate for at least 4 hours, or overnight, before serving.
🍇 Garnish with fresh blackberries and optional white chocolate chips before slicing
